An Abundance of Eggplant

We had the sweetest young woman house sit and care for Ozzie for us while we were away.  Her passion is gardening, and she always leaves us with loads of fabulous vegetables she has grown herself.  This time she left these gorgeous eggplants, some amazing peppers and the best cherry tomatoes I've ever had.  She also seems to like Ozzie as much as we do, so she is pretty perfect.

I decided that a pasta dish featuring eggplant was in order.  I searched the internet and found a simple recipe for eggplant pasta on a website called "An Italian in my Kitchen".  I forgot to take a picture of my finished dish, but the results were excellent.  I simply chopped the eggplant into big chunks and sautéed it with garlic.  Lots of Parmesan and we were happy.  I also put in a poblano chili she had left us and it provided just the right amount of sass.

I had to laugh, before I searched the Internet for an eggplant pasta dish, I checked my new Jamie Oliver Cooks Italy book for eggplant recipes.  And did not find a single one.  I thought that was so odd, until it occurred to me that "eggplant" is not what Europeans call that particular veggie.  When I looked in the index for "aubergines", there was an entire section!!

Same with "zucchini".  No such thing for Europeans.  They are "courgettes" don't you know.

  10. You have a treasure in that young lady in so many ways! Ozzie’s care would be first, of course, but those vegetables are a very nice bonus! Where we live, an abundance of any sort of vegetables is noted as ‘like zucchini’!
