New Cookbook

 I saw my sister T this past weekend.  We are a bit of a bad influence on one another, I have to say.  If I have something new, she wants it and if she has something new, I think I need to have it too.  One of her new acquisitions is the cookbook you see pictured above.  Only that isn't hers.  It is the one I had to go buy once I saw hers.

1000 Easy Recipes from the kitchens of Food Network.  I have to say, I love the way the book is organized.  There are only five chapters in the book, which consist of foods a typical family would regularly eat during the week.  Under Appetizers, there are recipes for various Crostini, Dips, Tea Sandwiches, Nachos etc.  Not just one recipe, but dozens in each of those categories.  Under Main Dishes there are the categories of Soups, Kebabs, Burgers, Panini, Pizza and Pasta.  Again, not just one or two recipes, but dozens of variations.  The other main chapters are Breakfast and Brunch, Salads and Sides, and Drinks and Desserts.

Everything is super easy and uses fresh (not processed) foods you can find at your local grocery store without any trouble.

I made the Greek Pasta Salad, which tasted pretty yummy when I sampled it.  The test will be at dinner when the family digs in.  This salad had penne pasta, chicken (from a rotisserie deli chicken) diced cucumber, cherry tomatoes and feta cheese as the main ingredients, with a hot dressing of good olive oil, sauteed garlic and red pepper flakes.  If I wasn't feeling lazy I would have added black olives and some diced red or yellow pepper.

I don't know about you, but during the week (especially in summer) I don't want to spend more than 20 or 30 minutes throwing together dinner.  And main dish pasta salads I can make ahead fit the bill perfectly.

Next recipe I want to try is a Panini sandwich made with grilled chicken, prosciutto, and fontina cheese that you put on ciabatta bread you have smeared with pesto sauce.

  1. What an interesting format for a cookbook! If only we didn’t already have more than 300 cookbooks … and that’s a low estimate. DH loves cookbooks as does AMIL.
    Perhaps that would be a good cookbook to give AMIL for Mother’s day? She isn’t up for much cooking like she used to be.

  7. Your salad looks yummy. Hot dressing made with olive oil would be something new to try. I’m with you on using good olive oil.
    And your clematis is absolutely lovely. So lovely how it looks on the rod iron.
