I have been making my version of Caesar salad for about 30 years. My original recipe was from the San Francisco A La Carte cookbook (no longer in print, but you can find used copies). It was my favorite cookbook for about 20 years, and only replaced by Ina Garten's books when she started writing them. If you can get a copy of San Francisco A La Carte, I think you will be happy. It doesn't have photos, but all the recipes are terrific. It was my Go To cook book whenever I entertained in the 80's and 90's.
Nicole's Caesar Salad (Evolved from recipe in San Francisco A La Carte)
Dressing:
1/2 cup good olive oil
2 cloves garlic, finely minced
1/2 tsp each salt and dry mustard
1 1/2 tsp Worchestershire sauce
1/4 tsp fresh ground pepper
Anchovy paste to taste. I probably use a good tablespoon or even two. You could use chopped up anchovies from a tin as well. (But you have to have the anchovies, one way or another, or it isn't Caesar Salad).
Salad:
1 whole garlic clove to rub bowl
1 large head of Romaine lettuce
1 egg, boiled exactly one minute
1/4 cup lemon juice (fresh squeezed)
1 cup croutons (homemade or not, it doesn't matter)
1/4 cup (or more) shaved good Parmesan cheese
Make dressing ahead and refrigerate. (Depending on how much lettuce you are using, you may not need the entire amount of dressing. I rarely use it all. Plan carefully so that you do not over dress the salad).
Rub a whole cut garlic clove around the inside of your salad bowl. Throw away the clove after you use it to rub the bowl. Wash, dry and tear your lettuce and place it in the salad bowl. Add appropriate amount of dressing and toss. Break your hot out of the water, just boiled egg over the lettuce and toss. Add the lemon juice and toss. Add croutons and Parmesan.

Funny but this is the same receipe I’ve used for years and was found in my copy of The Joy of Cooking that my mother gave me when I married. I have sense changed from the dry mustard to moist and have added some champaign vinegar. Just love it!
