Apple Season

I've been working like a crazy person this week, which is a good thing.  The shop was closed for five days during the recent fires, so I sure wasn't earning any money.  So, with putting in the extra hours, I haven't been spending too much time at my sewing machine.  What I did do a week or so ago, was to make this yummy Waldorf Salad with some fresh apples.  It was well received by the family and I thought I'd share the recipe with you.

Waldorf Salad

Ingredients:

4 assorted apples (Honey Crisp, Gala, Granny Smith, Fuji, chopped (not peeled)
1 Asian pear (chopped, not peeled)
1 small bunch of red grapes, maybe 1 cup.  I cut my grapes in half
3 stalks celery, chopped
3/4 cup dried cranberries
3/4 cup chopped walnuts

Combine items listed above in a bowl. Squeeze the juice of one lemon over all.

Dressing:

1 cup sour cream
1/2 cup mayonnaise
1 T. granulated sugar
1 T. Gravenstein Apple White Balsamic*

Combine and toss over salad.  Chill at least one hour before serving.

*The Gravenstein Apple White Balsamic is kind of a trick ingredient, that most of you will not have access to.  Any white balsamic will do (do not use a dark balsamic-it will turn your salad an unappetizing grey color).  If you can't find a white balsamic, just omit that ingredient, and taste to see if you need to add more sugar to the dressing.

  7. YUM! Thanks for the recipe. My mother used to make a similar version of this when I was a child and I loved it. Her recipe didn’t call for cranberries.
    We have deviled eggs fairly often and I was interested to know that my Aussie friends consider that a 1950s food they has gone off their radar.

  10. We love Waldorf Salad. I have even been known to pick the meat off a rotisserie chicken and add that in for a hot weather meal!
