The proper name for this recipe is Blueberry French Toast. It is nothing at all like French Toast, however. I would say it is more of a Blueberry Bread Pudding. Nevertheless, the thing is so good that the family refers to it as "Blueberry Crack", because it is so good you just can't stop eating it. Super easy and you can make it a day ahead. Try it for Mother's Day or any time you want to impress guests at a brunch.
Blueberry French Toast
1 loaf French bread, sliced and cut into 1 inch cubes
2 8 ounce packages cream cheese, cut into 1 inch cubes ( I just use 1 1/2 packages)
1 cup fresh blueberries, rinsed
12 large eggs
1/3 cup maple syrup
2 cups milk
Grease 13” pan. Place half the bread cubes evenly in the pan. Scatter cream cheese over bread and then scatter blueberries over all. Arrange remaining bread cubes over the top. In a large bowl, combine eggs, syrup and milk. Pour over bread mixture. Cover and chill overnight.
Next day, bake casserole at 350 degrees for 30 minutes, covered with greased foil. (Or use Non-Stick Foil). Remove foil after 30 minutes and cook for 30 more minutes, until puffy. While casserole bakes, make Blueberry Syrup.* Top blueberry casserole with some of the Blueberry Syrup, and pass the rest at the table.
*Blueberry Syrup
1 cup sugar
2 T. cornstarch
1 cup water
1 cup blueberries
1 T. butter
In a small saucepan, combine the sugar, cornstarch and water over medium heat. Cook 5 minutes until thickened, stirring. Add 1 cup blueberries and simmer, stirring for 10 minutes. Add butter and blend.
*You can make the blueberry syrup one day ahead if you wish.

I make something similar to this and can pass on a time saving tip. When you buy your loaf of bread at the grocery, ask them to slice the loaf twice. First as normal, second time, have them slice it end to end. You get these bread “worms” since you’d have to slice it a third time for cubes. I find the “worms” work just as well as cubes and that jumbled bag of them is a fabulous time saver, especially if you might be doing more than one batch. (I cook for events at my church and doing 6 batches of this was what inspired the double slicing.) Pretty sure I can’t use the term ‘Blueberry Crack’ on the church menu though. LOL
