Cakey Chocolate Chip Cookies and a Chat

I am a big fan of cakey textured chocolate chip cookies.  The recipe on the chocolate chip bag makes cookies that spread out too thin and are not what I like.  I happened to see the latest issue of Bake From Scratch magazine and picked it up at my grocery store because it had a whole article on different versions of chocolate chip cookies:  Classic, Chewy, Crispy and Cakey.

You should definitely pick this magazine up if you see it.  Just for the rainbow sprinkles cake on the cover!  I definitely have to make that for Eva, the Rainbow Sprinkles Queen.

The secret to cakey chocolate chip cookies is three fold:  1) use more flour, 2) use less butter, 3) chill the dough three hours before baking.  The reason for the chilling makes total sense.  Hard cold butter takes longer to melt than room temperature butter, hence your cookies will spread less as you bake them.  You could probably use the recipe on the back of the chocolate chip bag and just chill it and have a cakier version of the classic.

These cookies were excellent.  Just what I was craving.  I did not add any nuts (the recipe didn't call for them and Eva hates them).  I did everything as the recipe dictated, except one thing.  It called for vanilla bean paste.  Who the heck has that?  I looked at the two grocery stores in the miles-from-anywhere place where I live, and there was no such thing.  I used a teaspoon of regular vanilla and had no ill effects.

No sewing today, or for the rest of the week.  I have a doctor's appointment which involves a two and a half hour drive and a stay overnight, so I won't be too productive today.  Our county fair is Thursday through Sunday and the kids have no school so they can go to it and show their pigs and chickens they have been caring for all year, so I will be taking care of my Eva.   I cannot convey what a big deal the Fair is in our area.  We have taken Eva every year since she could walk I think.  The picture below was taken a couple of years ago.  She was wearing her lavender princess purse and a frog head hat she had made in preschool.  She was quite pleased with her ensemble.

I also have new house cleaners coming to clean my house from top to bottom, and have to stay out of the way while they are working. I've had a few of you email me to ask if I knew how my previous cleaning gal (who I adored) was doing.  Wish I could tell you.   I have tried to contact her, but she does not respond to me, so I guess she isn't coming back.  I feel so bad for her.  I completely understand her wishing not to tell her story to every person she knows, so I won't press it.  If I was told I had breast cancer, I think there is a good chance I would crawl under my bed and refuse to come out as well.  If she ever wants to come back she can, and I wish her a complete recovery from her illness.  So sad.  

The new Moda BlockHeads block is out today, but I doubt I'll get to it until the weekend!  Have a great rest of the week everyone.  I will post a picture of my progress on Ahren's quilt on Friday.  I completed six more rows last weekend, but had to put all the triangles away so the cleaners can dust.

    I loved the Mid-South Fair when I was a kid in Memphis. Will you and Eva go to the fair this week?

  25. I’m one of the weirdos who uses vanilla bean paste. It is SO much tastier than vanilla extract. You an buy it in Michaels and even Walmart. It is a short fat bottle by the Wilton extracts. I have been using it for years and would never buy extract again.
    My granddaughter would love that sprinkle cake too. Might be better than the sprinkle cookies we make with white cake mix. I will look for that magazine- I’ve never heard of it. Enjoy your cookies and your day.
