I had to share this new cookbook I ordered from Amazon. All the recipes are for two. I have had good luck with Taste of Home cookbooks and recipes over the years and thought I would give it a try. The recipes all have large colorful photos, and the book is in large print, so it is so easy to read. No confusing 1/4 cup with 1/2 cup because you can't read the print.
Tonight I am going to make stuffed peppers. Fingers crossed my father will enjoy them.
Taste of Home recipes are always sort of basic, classic versions of dishes you have heard of. No exotic ingredients, and great for everyday cooking. I once attended a quilting retreat where the meals were all prepared by lovely local ladies and served up to the quilters. I am telling you, every single thing we ate was delicious. As I recall, they even made a dessert with every meal! Everyone knows quilting burns a lot of calories, so they didn't want us to run out of energy.
I wasn't able to get any sewing done the past couple of days. I got a bee in my bonnet to reorganize my closet and got rid of a ton of stuff I wasn't wearing. Why do we hang on to things that we aren't using? I have lost some weight and was happy to remove some too-large clothing items from the closet. But did I get rid of them? Of course not. I packed them up in large plastic tubs and put them out in the garage.

I was not a picky eater as a kiddo. My cooking (for 7) mother made delicious stuffed peppers. One of the only things I didn’t care for was the green pepper. Have discovered in my own cooking career I like red, yellow and orange peppers much better. I’ll have to give stuffed peppers another try. Might look at the cookbook too as I have gotten quite lazy, cooking for one. Since Covid is improving, I really need to invite my kiddos to dinner. A little stimulation cookbook could help that along. Wishing a good appetite for your Dad.

That looks like an interesting cookbook. I can truthfully say that I’ve never had a bad recipe from Taste of Home! If you want to eat a decadent dessert try their Lime & Gin Macaroon recipe! I may as well not show up at quilt retreats if I don’t have a batch with me! Have a nice weekend with your dad! Stay well!

As empty nesters, we could use that cookbook. The Mister does not like to eat leftovers so would solve that problem.

Cathy, I have that same Mister at my house… so recipes for 2 are a good idea. My husband’s family stuffs peppers with a lamb/rice mix and I have really learned to love the red and yellow peppers better too. Enjoy your cookbook and Dad this weekend!

A great website as well is onedishkitchen.com. Lots of recipes scaled for one person; if you really like something, it’s easy to make more. If you hate it, you’re not out a lot of ingredients.

Lucky you that you lost weight! I’m still trying to get rid of the Covid weight I gained 🙁 it’s always nice to organize and get rid of things you don’t need. I’m sure someone will appreciate your clothes!
