Eva's daddy Ryan invited us over for Easter dinner, and Eva thought we should bake a cake. This fun Easter Peep cake could not have been easier to make. I chose to make a yellow cake from scratch, but you could use a cake mix and it would be great. I then made buttercream frosting, which I tinted green. We dyed sweetened coconut in a zip lock bag with a few drops of green food coloring. Shake it up a bit and you have coconut "grass". Gently press it on top of the buttercream frosting on the top of the cake only.
Finding the Peeps the afternoon before Easter wasn't that simple. Our grocery store only had the chicks, which would not be as effective as the little bunny soldiers. Luckily the drugstore had the bunny Peeps, and we bought loads of them in every color. I think we ended up just using 21 of them, or maybe it was 18. Eva is learning about patterns in kindergarten, and her job was to arrange the bunny soldiers around the cake, and not have the pattern get broken. No two pink bunnies next to each other and all that. With the tiniest bit of finagling it came out perfectly.
Peanut M&Ms were the treasure trove of eggs the bunnies are guarding. Those were gently pressed down into the frosting on top of the cake so they would not roll around.
It was a fun project for Eva and I to make, and it was so simple, my five year old could do a lot of the helping. I wish the Peeps were a bit more pastel–those neon shades are a bit lurid to my eye, but Eva loved them. Be warned, this cake is sweet. Cake, frosting, sweetened coconut, Peeps, M&MS….It was more for the process than to end up with a gourmet dessert. But, people ate it!

I made a black forest torte with the 3 1/2 year old grand daughter as it was my eldest so s 26 th birthday. It was a little wonky as Miss Jasmine kept taking chunks of cake as I was assembling it. Great fun though and everyone ate the lopsided cake. They fo bring us joy!

Love how your cake turned out! If you want to make another sweet treat you can use the peeps to make rice Krispy treats. It’s super easy and tasty when you use the flavored peeps, you can even layer them for cool color combos. Just in case you didn’t go into a sugar coma already 🙂
