Loaded Potato Casserole

I made an awesome potato casserole dish for dinner and wanted to share the recipe, which is from one of the Taste of Home cookbooks.  When we were at Buggy Barn this summer for our quilting classes, a local woman who had her own catering company fed us the most incredible lunches each day, and she told me many of her recipes came from the Taste of Home cookbooks.  I looked into getting a few of them, and everything I have tried has been so tasty.

Loaded Red Potato Casserole

16 small red potatoes, unpeeled

½ cup milk or half and half

¼ cup butter, cubed

½ tsp pepper

1/8 tsp salt

1 ½ cups shredded cheddar cheese, divided

½ cup crumbled cooked bacon

1 cup sour cream

2 tablespoons chopped chives

1)      Place potatoes in a large pan and cover with water.  Bring to a boil and cook 15-20 minutes until tender.   Drain

2)      Mash potatoes with half and half, butter, pepper and salt.  Transfer to a 9 x 13 inch baking dish.  Sprinkle with 1 cup shredded cheese and bacon bits.

3)      Dollop with dabs of sour cream and sprinkle with chopped chives and remaining shredded cheese.  Bake uncovered at 350 for 20-25 minutes, until cheese is melted.

I know I said I was done with Halloween, but I know some of you will get a kick out of this.  Eva was Angelina Ballerina for Halloween, but wouldn't wear her mouse ears.  For those of you who aren't familiar with Angelina, she is a little white mouse who wears a tutu and wants to dance.  Eva was busting a move for us, but I don't think she had a clue what all the fuss was about!

  3. Gotta love that jazzy pink sparkly outfit, hot pink bracelet, and happy smile!! When you’re putting a new look together, sometimes you have to draw the line at over the top accessories. Guess the mouse ears were the thing to go this time!
