I was invited to a Memorial Day barbecue and asked to bring a dessert, and this one is an old standby. In fact, it is a recipe I think of as "retro", as my mother in law used to make it regularly in the 70s. She called it "Fruit Pizza". You use a tube of Pillsbury sugar cookie dough which you evenly press into a 12" pizza pan. Bake it for 13 minutes (more or less depending on your oven) at 375. Let the cookie crust completely cool and then spread it with a mixture of cream cheese (8oz), sugar (1/4 cup), and vanilla (1/2) tsp. Use an electric mixer to combine it until fluffy. Spread evenly over the crust, and top it with colorful sliced fruits. Make a glaze of 1/4 cup apricot preserves and 1 T. water, and drizzle over all. Chill a couple of hours and you will have a fun and yummy dessert.
Memorial Day always makes me think of my sweet father in law, Larry. He was so proud of his service in the Navy during WWII. In his later years, he always wore a cap that declared he was a US Navy Veteran. He was so pleased when anyone commented on it. He was such a sweet man and we miss him very much. After my mother in law passed away, we brought him up to live where we are so we could be close to him, and I am so glad we did that. He was fading fast, so we didn't have a lot of options, but I have such lovely memories of him, even in his decline. Our family and his service in the armed forces were the things he took the most pride in. He had many other accomplishments as well, such as having a PhD in Microbiology, being married to the same woman for 70 years, and single handedly tutoring Sara in math so she could graduate! He was always there for his country, and always there for us.

I am technically Canadian, but my mom is still a US citizen living in Canada. My Grandpa fought in WW2 and my uncle was in the Air Force his whole life. Its very easy to take for granted the life these many, many men and women have fought and died for. My Grandma’s brother once showed us his WW2 helmet that had a bullet hole in it, just a few inches lower would’ve been a lot different outcome for him. Thanks to all US servicemen, past and present.
