I have completed my first two weeks at my new job today. And it was Pay Day! Big Whoop. My check was half what I was figuring it was going to be. I was thinking I was getting paid for two weeks, but nope, that wasn't the case. I started my job on August 4, and the pay period was July 28 through August 8, so there you are. I got paid for one week's work. I ask you, why didn't someone explain that to me in advance? I would have if I were the hiring person. Arrggh. And don't even suggest that I try and explain that to my creditors. They want their money and they want it NOW. If you don't pay, they have a guy named Bob from India call you and pester the life out of you. I swear he calls four times a day, and now he doesn't even ask to speak to me, he just says "Nicole?" before I hang up on him. Sorry,TMI, but that is my life right now. Sigh.
Since I don't have the money I thought I was going to have for my food budget the next couple of weeks, I am going to have to Economize. Here is a yummy recipe that is a heck of a lot more creative than Mac N'Cheese or hot dogs. I got it from the new Rachael Ray magazine, and it is supposed to be one that you can just throw together without a recipe, but I went online and got the real scoop. Cheap and good and done in less than 30 minutes, and you can take liberties with the amounts etc.
Ham, Egg and Cheese Bake
4-6 slices good deli bread sliced and cut into 1 inch cubes
8 ounces deli ham, coarsely chopped
2 ½ cups Monterey Jack cheese shredded
3 T. finely chopped fresh chives
6 large eggs, whisked
½ cup milk
Salt and pepper
4 small tomatoes, sliced
Preheat the oven to 350. Butter a 2 quart baking dish. Layer the bread, ham, 2 cups of the cheese, and 2 T of the chives into the dish. In a medium bowl, whisk together the eggs, milk, ¼ tsp salt and ½ tsp pepper. Pour into the dish and top with the tomato slices in an even layer.
Bake the eggs until nearly set, about 30 minutes. Sprinkle the remaining ½ cheese and 1 T chives on top and bake a few more minutes.

I’ve had jobs where you start and then they tell you that you only get paid once a month and your first paycheck is a month from now! Ouch!!!

Sorry about the paycheck but just think how nice the next one will be. That recipe looks really good and easy and I can’t wait to try it. My husband just likes meat and potatoes or breakfast so I will make it for myself! I’m sewing my third Mystery BOM block tonight. I vow to stay caught up for a change after seeing everyone else’s done on their blogs.

Rumor has it that Ohio is a non-harassment state. [Just sayin’… if you need a place to park. LOL] And don’t you just love the ‘American’ names that are picked? Do they believe that we’ll believe overseas contractors are not at work just because of a name? Well, anyhow, sorry about the $$; fortunately you have your stash to fall back on when you cannot buy any. The recipe sounds great and looks delicious!

Well that just sucks, really! When hubby’s company got bought 2 years ago they said no problem, they get paid every two weeks too so it’s all good. I was the ONLY one who said um is it the same friday (or the alternate one) because we either will get one check or we will have to wait 3 weeks without pay. Turned out it was the “we get screwed” option, but the company handed everyone 2 weeks pay with no strings.
Tell Bob he can’t call you anymore. I’m pretty sure he has to stop calling by law. Thanks for the recipe, it’s perfect for us…I’ll take out the ham and add asparagus or broccoli!

The paycheck deal is the pits!!! And I understand why you need the dough so bad you have a son in college they just suck you dry 🙂 We had two daughters that went to Cal Poly also….wonderful school but the living is rather expensive. Still they both got out of school and got Real jobs with a real salary YIPPEE!!. I love your blog have read it for about a month now and I learn a great deal from your posts. The picture of the recipe looks great. Because of you I got that very magazine and plan to make the same dish Hope it was terrific!!! Hope your next check is super big and you can go out to dinner to celebrate your first real payday 🙂 Kathie

Hi Girlie, now listen….everybody is feeling the crinch right now. There is othing wrong with you or different about the situation you are temporarily in. Consider yourself part of the “in” crowd, lol! BUT, there is always a silver lining. Here it is! Being “broke”(it’s temporary!) brings out the CREATIVITY because we are forced to actually THINK :O) We find solutions to things that we didn’t have to think about before the crunch. We are suddenly so excited when we fondle out fabric that’s been sitting on the shelf for ages and we join as many swaps as we can for variety. We learn to cook meals with what we have, etc. Things like this enrich out lives so we can reconnect with the basics in life, the ones with haven’t had to connect with until the recession hit. We are all in this together and while we are in it, we must make the best of it. I have decided that instead of taking out yearly cruise that I am going to re-do parts of my home, plant my own veggies, and learn to re-upholster my own furniture. I think making some goals will kepp my mind off the bills that are due, lol :oD Amie
